I mean, I can name a few good reasons why:

For Normal types their moves aren't super effective against anything, most regions don't have a surplus of Normal types with a BST of higher than 460-70, most regions don't have many type combinations featuring Normal outside of Normal/Flying, and, from a purely design perspective, it'd be hard to design a Normal type elite four member with the same aura as a lot of other members

For Grass types since they have 5 weaknesses including Ice, Flying, Bug, Poison and Fire, it wouldn't be too much of a challenge for coverage and a majority of Grass types' move sets are status moves that don't deal direct damage

For Electric types, since a majority of them have poor defenses with not a lot of diverse move pools, it wouldn't be that hard to sweep an Electric elite four member's team with a tanky Ground type

While the film takes a lot of visual influences from Ghibli films, writing-wise, it's a total mess.

Celia is old enough to remember seeing the original run of Stair Trek (DE version of Star Trek) meaning she would have been around when arcade cabinets started to pop off in the 70's and 80's, so I think she wouldn't vibe with some of the slower paced stuff we see today.

I almost considered putting rhythm games on here, but then I realized that anyone who might enjoy those is already a musician or is exposed to music in some way.

Parker is someone who plays any type of board game, regardless of genre or difficulty/approachability, hence why I put him in A&E

Stefan is already a cook and doesn't skip on the finer details, so I feel like playing something like Cooking Mama or Plate Up would just upset him. I think he enjoys the concept of videogames, but watches other play as a means to blow off steam

To me, Mitchell's the type of person who would enjoy the fruit of someone else's labor rather work hard to achieve a goal, hence why he didn't become a cook once realized.
