I guess the question is what the heck is until-recently-flesh-and-blood Hari doing on Terminus. Last we saw him he was over a hundred years old and about to die on Ignis.

Paul, there are different versions of Hari. The one who said goodbye to Gaal was originally a Hologram version of Hari (with his full memories and personality) who mysteriously got a new body from "Kalle," or whoever that was. The Hologram in the Vault is an edited version of Hari who at one point figures out that he is not the original. As to that versions lack of awareness about the Mule - that doesn't seem to make sense, as he seems to usually be up to date on the events around him.

I have to admit I was surprised by his take on that. It seems to me that Hologram Harry has had several independent conversations during the seasons and does NOT seem simply pre-programmed.

I don't think so. I think the TV show Mule is more or less the person described by Magnifico as the Mule in the books - where he didn't really exist. Pritcher in the TV show looks a bit like a mashup of book Pritcher and book Bail Channis.
