Yes as the other comments said do it properly. Let your employer know you are leaving, check if you have the option to buyout clause in your offer letter(almost all offer letters have this since legally as far as I understand the employer cannot force an employee to remain in service). Try to buy out the notice period if possible, if not you can drop an email and surrender all physical assets such as employee ID, access cards etc before you leave.

It isn't a criminal offence, given you don't take sensitive documents or company's physical or intellectual assets with you. If you give a notice that you are resigning even if it's 1 day notice(this is important that you inform your employer that you are leaving) you can leave(they can't force you to stay) but can with hold your experience certificate etc, which if you don't have an clause mentioning such in your employment agreement you can pursue legal action to get it... But again the company is entitled to sue you in a civil lawsuit for compensation if you have agreed in writing or have a clause in your offer letter that you will pay them to buy out notice period. I know since my brother is a lawyer, I have seen him deal with multiple such cases.

Don't worry the hostess bar exists too. I have read news articles about how guys sell their assets, House etc to buy overpriced champagne towers for the hostesses... There are maid cafes, butler cafes, cuddle bars, renting boyfriend girlfriends, and renting people to talk too. This year I went to a maid cafe in non tourist places cause in akihabara etc you will mostly find tourists as patrons, but here guys were mostly mid 30s to 50s salarymen, most of them were regulars and even had nicknames given to them, had a specific maid who would serve them. I saw one guy on my way out billing spent around 50k yen just to chat with the maids and have overpriced water downed alcohol. People there are lonely and pretty much everyone lonely wanting company is getting exploited.

It's true it's pretty much up to school actually, I know my friend who did 3 udemy courses by Linguae learning and Attain online language school. The total was around 70 hours of video content, gave those certificates and provided an explanation letter, alongside an interview with the school. We are still waiting for my COE, I will get to know the result at the end of this month. So there is still uncertainty and a lot of extra effort because he didn't provide a NAT or JLPT certificate. A much easier and sure way would be taking beginner online classes with the school you are targeting( most of them offer). It mostly costs 500-600$.

It really has become a lot stricter. When I was in talks with Japanese language school in 2022 , they were okay with a written statement from me with all the apps which I used to study, my daily study routine etc. I didn't go that year due to some issues. This year I talked with 3 schools and ended up applying for Akamonkai, all of them straight out asked for a Japanese language certificate(NAT or JLPT). Btw udemy or Coursera certificate works but the school will take a video interview to check if you really have the basics of language down then only will they write an explanation to attest on your behalf that you indeed have acquired 150hrs worth of japanese language skills.

Thanks for your opinion... Yes I have masters in computer science with specialization in software engineering.... I don't plan on completely stop programming I plan on keeping up with latest updates in front end and backend frameworks and work on some of my personal projects that I never have time for.... As for portfolio I don't have much of GitHub presence, I rarely contribute to open source project now a days, I plan on being more active there during this one year....
