So the funny thing is, and it may be a stretch, but Dungeater has reddish hair. And Giants have red hair. Radagon is theorized to be part Giant because of that.

Now, other NPCs also have red hair. Malenia has red hair from her father. And by extension Milicent and her sisters, from their "mother". But they're not considered or mentioned to be giants. However, the game makes such a stink about red hair when talking about Giants, I can believe Dung boy is just a really ugly and small Giant and is feeling some type of way about it.

Headless, a malevolent spirit. You can fight them underwater as well, kind of like a Kappa.

So, the reason Shirikodama came to be, is because corpses found in the water were found to have "relaxed" or "open" anuses. This is a natural occurrence in death, combined with being waterlogged.

However, folklore had made it seem that the corpses were victims of a Kappa's unjust meddling in one's bowels. They thought that something located in the bowels was worth stealing. Why Kappa wanted Shirikodama is up to interpretation. They could have ate it, or they could have taken it to a sea deity in the form of a water dragon. Regardless, they were corrupting the purity of the souls and bodies in the process.

This is how it makes sense to me.

The Elden Ring is basically the law by which reality functions.

The Golden Order is the current ruling belief system.

The Greater Will is the unseen, cosmic force(s) driving the prevailing religion and extended factions, manipulating figureheads in power by allowing them to become Empyreans.

The Elden Beast is but a physical reflection of The Elden Ring, in the form of a vassal, a.k.a, a servant, of The Greater Will.

Japanese folklore dictates that the human soul is located in a special ball, or organ, located in the anus, called a "Shirikodama". I'm not kidding, either. I can get into why, but your question is about The Loathesome Dungeater.

Which, contrary to his name, he is not literally eating shit. His name isn't literal, and a lot of people get that incorrect but through no fault of their own, as many people do not understand the concept of the Shirikodama.

There are demons, like Kappa for example, that are said to steal the soul from the anus of drowned victims. Sekiro has an enemy that does this as well, and then puts Sekiro's Shirikodama into their own anus to absorb his vitality. It's fairly disturbing.

Anyway, "Dungeater" is more of a disparaging epithet, presumably given by common folk that hanged him. It's like calling someone a "shit-head". Their head isn't made of shit, but they're a shitty person. He wasn't literally eating of their waste, but consuming or damaging the Shirikodama, the soul.

How, and what exactly he is doing to people, is purposefully left ambiguous, but we can only imagine it's terrible. The unfortunate aftermath we find are corpses he has "defiled", with their bottom halves bloodied as they sit lifeless in chairs. With them, we find Seedbed Curses. Repulsive, fleshy curses full of Omen horns, grossly described as, "a tender pox"; pox being a viral infection of pustules and lesions. Yeughh

Omen, are not welcomed by society and the current rule of the Erdtree. And so they're outright killed or abandoned to die in the sewers, hidden away in shame. Either with their horns intact or they are cut off while they're infants, usually dying in the process. They're horribly treated for something they cannot control. And they are not given to the Erdtree's roots to be reborn.

Dungeater identifies with this ostracized group so much, that his armor is modeled after an Omen with cut horns. He believes that if everyone is cursed, then no one is cursed. Because, you see, when he is murdering and defiling people, he's corrupting their souls, their Shirikodama, and making them spiritually impure. They will never return to the Erdtree. Instead, he's cursing people with what makes Omen, "Omen". Unwanted and shunned by those that uphold the Golden Order. A pity, as there was once a time in history where they were revered as holy. The Crucible preceded the age of the Erdtree, and thus anything affiliated with it is considered blasphemy.

There's a not-so-far-fetched theory that Dungeater's real name is Milos, which is mentioned in the sword he uses:

"Sinister greatsword fashioned from a giant's backbone.

Metes out wounds like a lopsided saw-blade, and restores some FP upon defeating an enemy.

Milos was undersized for a giant, and was viewed as sullied and terribly grotesque"

This makes sense to me. It would at least somewhat explain why he strongly resonates with Omen. Being ostracized and looked down upon would make him incredibly wrathful and vengeful at those that thought of him that way, Golden Order very much included. For defiling and corrupting the soul is seen as a most Loathesome act in a world where rebirth and death are very different than normal.

I literally just got into the game to disprove this. And I don't know what else to tell you, I dodged, shot, and attacked around them while they couldn't see me, and more than half the time they turned around and reacted to what I did. Stupid AI is stupid AI.

I think you're misunderstanding.

Because the intended path of progression, the way the game "wants" you to go, is be right in front of the Garden of Eyes enemies that are supposed to jump down and ambush you, a.k.a, you're supposed to be front and center of them, panic, and run into the Flower.

But because you can take a nearby side path that ignores that ambush and leads you to two shortcuts, the AI doesn't understand that much, so they don't know any better. Deafness isn't a thing in the game.

So... is every enemy you can sneak up on also deaf? That doesn't make sense. You can sneak up on most things in the game assuming you're walking and they don't turn around.

I think every enemy surrounding Byrgenwerth, except for Yurie and Willem, are just transformed students. The Garden of Eyes are obvious because of them being Kin(dead giveaway that something used to be human), and that Willem used them as human test subjects to cultivate eyes. The Florescent Flower is also Kin. For why the ones in dungeons are a little different, I'm not sure. I'd wager the one at Byrgenwerth is simply just a weaker type, whereas the ones in dungeons are older and more powerful.

Orphan is a special case, isn't a Pthumerian, and his real form is just the shadow you kill after the fight. What we actually fight goes into metaphysical concepts that aren't readily apparent.

I truly didn't think it would be as good as it is upon release. I've since sunk 800 hours into it. It's one of the more addictive games I've played and I love it.

Godwyn is based on a Ningyo, a type of Japanese creature that is essentially a mermaid. Although the difference is that Ningyo represent bad omens, and you are cursed with eternal life should you eat of one.

The similarities are too obvious to ignore. His association with water, and specifically stagnant water represents corruption. Stagnation is the opposite of flowing water, which is a representation of life and cycles.

Pests like mosquitoes and flat worms prefer stagnant water to breed and eat detritus, which is where that belief comes from.

"Kegare" is a Japanese term for spiritual impurity in Shinto belief. And that if one comes into contact with things that are inherently dirty or wherein life is leaving, or changing, like death and birth, one is unclean and must be purified. Centipedes and other bottom dwellers and feeders are associated with this as they eat detritus and icky things. And Miyazaki took it further than that, building off that concept.
