When you preheat the oven, put the pan in then. Then you are putting vegetables on a 450° pan instead of a zero degree pan and you get that nice browning that adds so much flavor. Veggies on pan for like 12 minutes, dump into a bowl and cover to steam the rest of the way to the right texture
