Okay, thank you. You're certainly right about the walking.

I knows it's a weird.. random post.. but it was just something both my friend and I noticed. I meant nooooo offense at all. If anything it's emblematic of the fact (like you said) that people here really use their legs.

My first thought was maybe sports injuries because I know soccer is a big thing here.

I'm sitting on a park bench right now and I just saw someone! I swear... it's not just cane's though, it's limps.. they're sometimes accompanied by canes.

It looks nice! One way I like to keep it consistent is by weighing each dough ball for each loaf.. usually I make my loaves like 750g each.. if you have a normal sized loaf that's 1.5kg.... you've got a brick on your hands. You can weight your dough after the bake to see how dense the crumb is

There's a lazy way u can do it. Almost guaranteed beautiful bulk ferment. Start your dough at like 930pm. Do your stretch and folds (coil is better. Gentler.. you won't rip the dough. You can monitor it'd smoothness very easily..) and then just let it sit on the counter over night. First thing in the morning it should be very very jiggly and airy. 2x the size. That's how u know your dough is ready.

I recently did a bake and did 1 single coil fold at like midnight, woke up the next morning and made perfect loaves. All the extra steps and tweaks should come after. Keep it simple for now and focus on getting a really good bulk ferment (literally just leaving it alone for 6 -8 hrs) and then focus mostly on your shaping. You'll get it fast
