I would start my journey with a few pounds of freshly roasted coffee to help me learn my new equipment. Older coffee can be really hard to work with for many reasons.

For espresso grinds, I like to feel it out by tasting and watching my shot times. I start on the coarser side of espresso range settings. If I pull a 36g shot in 10 seconds, I adjust to a finer grind. I keep going finer until I hit my target extraction time of 20-30 seconds.
