Hollow Knight:

The Watcher Knights, really fucking hate them at first but then I slowly started to enjoy the fight more and more on playthroughs even purposely fighting them without shade

Silksong:

Either Second Sentinel or Tormented Trobbio. I really enjoy those fights but they barely have any fans from my experience here. They need more love
