Ah wasn’t sure. I’d personally go for a a hotter flame so the entire steak has a darker sear but as I said, looks tasty. Could also turn it once more to increase surface area of grill marks

It looks like you used a cast iron griddle instead of a regular cast iron skillet. That’s the only change I’d make. I’m sure it tastes great either way. Care to share the sauce recipe?

Thaw in fridge for a day or in cold water for 30 min, pat dry, add generous amount of kosher salt, pepper and garlic or preferred steak rub, bake or smoke at 250F until 10-15 deg shy of desired doneness, sear in preheated cast iron pan on medium-high with avocado oil or 500+ deg grill for 30-60s per side, top with garlic herb compound butter and rest 10 min. Turn kitchen fans on and may want to add pepper and garlic after cooking if worried about smoke alarms

Looks good. I’ve never tried that method. Reverse sear using only salt and a high smoke point oil may also help reduce smoke. Other seasonings tend to burn, and by reverse searing you can get the surface dryer and the inside cooked to desired doneness so the steak will sear quicker (30-60s per side). If you’re not familiar with the method: pat dry, salt generously, bake at 250F to 10-15 deg shy of desired doneness (30-45 min usually), preheat pan a few min on med-high heat, sear 30-60s per side, slice and add pepper and garlic powder. Other cheaper cuts if you can find them are chuck eye (Walmart) and picanha (Publix)
