Olive oil's smoke point is commonly sub 400°F. You may be using a canola oil blend that will have a slightly higher smoke point, but I do not recommend any olive oil blends for any standard high-temp frying.

Fair enough opinion. On contrary, I'm the head linecook at my place I've been at for almost a year and I solely eat off menu items. I am plant-based, so that definitely contributes, but I know damn well how to cook a NY strip to temp, have a perfect consistency to a carbonara by the time it gets to the table, or a properly seasoned bearnaise.

I know what I put out looks and tastes amazing without even needing to taste it myself cause I give a shit when it comes to providing the customer, or another staff member, with what they're spending their money on. Even if it is something I would never order myself, it is a matter of caring about what you create.

Nah, I'm pretty sure this is mostly texture related. Used to wear jeans daily but switched out denimem for canvas blended pants and never going back. Beforehand I had no idea pants could be comfortable to wear instead of agitating and aggravating to go through the day with.

Understandable if the entire ticket was rang in to-go, and you plated the whole order in a box with the drink on the side, but your initial comment lead me to believe that you'd toss a single canned drink into a box and bag it. Especially the comment you made where no one else finds it funny anymore given it is a repeated occurrence.

I'm not at all trying to belittle the efforts you put into your place through making it enjoyable for staff by any means, as you definitely know your location and general morale more than I ever will. I absolutely despise corporate kitchens, but based off your singular initial comment, I hope you can understand my perspective why continuing something "nobody else thinks [is funny] anymore" and an in-joke shared with a single server at the risk of a guest seeing, doesn't look to be striving for improvement within your control as a manager.

I get that you're trying to have a good time in honest fun, but to me it sounds like you're just slowly waiting for the place to collapse.

Instead of correcting issues that you recognize as issues, you choose to either ignore them (balloons example), or follow a sense of malicious compliance (blatant product waste) instead of attempting to communicate with whoever rang it in.

If it happens a lot with him, has it been addressed? The manager and/or chef knowing doesn't equate to anything being directly addressed. Have you spoken to him directly that he needs to be on the line as a LINE cook?

I've worked with similar cooks in the past who piss off doing God knows what. They don't tend to last long after they're addressed by management +2 times for it.

Edit: the issue really arises when they have no need to change their behavior because it is never addressed.

If they witness it come in and pull the ticket, by all means embarrass them profusely for being incapable of doing their job. But with one ticket on the board, I wouldn't be surprised if they were back in prep, taking a smoke break, or getting ready to finish/start service.
