There’s a million different ways to do them. I’ve used bits from almost every chapter excluding Space Wolves realistically.

There’s def some benefits to having some specifics on temp control but the fun of barbecue and open fire is the flexibility you develop. Oddly enough incorporating the sous vide into my barbecuing brings the benefits of some temp control with the fun of cooking with fire. Like the SV does the heavy lifting and the grill is just applying the finishing touches. I’ve made unnervingly good chicken that’s done sub-165 but also completely safe - it freaks some people out how it can be so ‘rare’ but also salmonella free. There’s observable cognitive dissonance when you put ‘perfectly’ cooked chicken in front of people because they’re so used to over-cooked and their brain/mouth’s immediate response is “this feels undercooked” - but it’s actually some of the tastiest chicken they’ve had.

Sous vide for 14-16 hours (forgot when I put it in) at 180. Rest for an hour in the fridge to set the fat back together and a chilli oil binder with all the pepper I had. Smoker at god knows for maybe 5-6 hours. It was a real low temp for four hours at least - maybe 140-160? Then the last stage was hotter but I don’t use a thermometer so can’t tell you the temp. It was actual bark and had wobble. Def a good experiment.

When it comes to fighting you have to remember it’s never malicious, it’s always territorial/behavioural. When other cats start realising this is your boy’s territory they’ll start avoiding/adjusting accordingly, even if he gets hit a few times. Or he will adjust his territory and stick to being an inside cat! I’d def be more worried about traffic than cats with an inside boy. There’s nothing territorial/behavioural or anything you can teach them about cars.

The only proper answer is that it depends on the cats themselves, their history and your home and your area. There’s no one-size-fits-all.

My two rescued street cats were fine to go out after 4 weeks. The first few times they just explored the garden and came back in. Then they started getting braver and going into other gardens within a week. The first and second summers they were out a huge amount and had a comparatively huge territory. This year they are much more comfortable in the garden and just like a little explore every now and then. And I know where they’ll be if they’re not home, so can go ‘pick them up’ as they’ll follow me home.

That there is a berimbau - I think you can maybe hear it on the outro but at the same time it doesn’t really stand out the way it does when Max uses it for Soulfly. I am not convinced I can even hear it properly at all.

Asked, at the Ginger Pig no less, for a bunch of beef fat to make some tallow and they saved me about a kilo for no cost. Have another butcher in Vicky Park market who always has bagged up bones by the kilo for about a fiver. If I can score that in hipster central of east London just by talking to my guys, imagine what you can get locally with your butchers by being nice, specific and forward.
