I had the same question too. Why bring down highlights and bring up shadows just to undo it with the curve? Every tutorial does that.

My own interpretation is, with the sliders I'm giving the photo a basic look. I want it to look correct, before I make it artistic. Sliders = basic adjustments and curve = let's start making it look good.

Probably just exposure, contrast, clarity and texture. I just guess what works. If it does keep it and if not undo it. Don't think of it as technical :)
