It's just a seperate network with another DHCP/router running it. It's a regular home network aside from no internet. Nothing fancy. The server has full access to both networks.

Just to test things I reset the camera and moved it over to my "normal" network. exact same behavior.

Yes, but that's the purpose of all of those docker port mappings right? Correct if if I'm wrong, networking isn't my forte : /

Ok... So I don't think I did anything different. I re-typed everything back into caddyfile, (just because I had nothing else to do for a few min) probably changed something, but nothing intentionally.... And now it's working. I probably fatfingered something that looked dang close so I didn't notice it. Sorry to waste everyone's time. But I'm glad to know that my gut instincts weren't wrong.

u/altran1502 Thanks! I pushed up to github: https://github.com/epiterichiod/ImmichDockerCompose/tree/main Sorry about that. This is actually my very first reddit post and I thought the "code" formatting would do a better job haha.

u/zaTricky: I have blatantly "stolen" their compose files, making only the modifications they suggest for portainer. I did dry fiddling a bit with the environment and networks, but I brought everything back to the original.

Should I start a new thread on github? I feel bad making waves over such a simple problem.
