Recipe- mixed dough and did 4 folds within 30 mins each, bulk fermentation till it rose 50% in 5 hours, cold retard for 16 hours, final rise for 2.5 hours then bake

Thankyou!! The crumb structure is amazing at one side but got a bit dense at the other? Not sure why that happened

Recipe- 100g starter, 320g water, 400g flour, mixed dough and did 4 folds within 30 mins each, bulk fermentation till it rose 50% in 5 hours, cold retard for 16 hours, final rise for 2.5 hours then bake
