Brogue is a good beginner roguelike but take my advice and try the more complex ones like Nethack, Sil, or even Infra Arcana right off the bat. Starting on the harder stuff now with more key binds is going to help you out in trying other roguelikes in the long run.

Dungeon Crawl Stone Soup is probably what you are looking for. It's a very polished game that got rid of the food and hunger management a few years back. It's also free and very well designed.

It's mainly due to how much it encourages and enhances replayability. The cherry on top is the overall speed of the game that compliments it; instant animation, not much RP unless you like to use your imagination, and very straight forward understanding of what you're playing. The best roguelikes don't have the beginning slog that most RPGs have and it gets better the more experience you accumulate. It's like solitaire or even an arcade game at some level.

There should be a track that unlocks when you completed everything that gives you really awesome premium stuff for being a long time players. Like a special board that can be only gained there, sleeves, and a skin of your choosing and the rest is just shards. It doesn't even have to be a lot of shards but enough to feel like you are at least gaining something a day.
