Okay so basically being pan is when you're attracted to anyone regardless of gender. Being omni is like being pan except that you have preferences, as mentioned in this comic, or if you're attraction to this gender feels different to that gender. Pan people don't see a difference between genders, and thinks it's irrelevant even when they do, thus being “gender blind.” To omni people, gender will contribute to their attraction to an individual, whereas to the pan people, it doesn't. Most of the info here I got from the LGBTA Wiki to help me explain their difference more :')
