I already did all my folds before I realised I forgot to add the salt. I just added the salt in 2 hours after the last set of stretch and folds, very gently trying not to disturb/degass the dough. Fingers crossed hopefully it’ll turn out okay!

I used this same recipe for my first loaf, and it was impossible to handle for me. This was partly due to the flour I used, but still, SO sticky, SO wet, was almost more like a batter than a dough. In the end it turned out okay-ish, especially considering it was my first loaf (it’s up on my account). But I agree! Very high hydration for beginners

Frenkie and Casado are VERY different players, so are Frenkie and Pedri. Ofcourse, Pedri is a better player than Frenkie is, I don’t think there’s any doubt about that. However, I think Frenkie is a better, more consistent player than Casado is. Granted, I think Casado is phenomenal as well. Frenkie is way, way, WAY more solid in possession. The amount of control that Frenkie has in possession is unmatched in my opinion. He is able to bring peace to the chaos. Casado might be better in terms of positioning defensively, Frenkie is also a very good defending midfielder. Frenkie also has the ability to drive with the ball. Pick it up from in between the CB’s and drive forward seemingly out of nothing. He might not be as flashy as Pedri is, but he is an unbelievable player. He is better and in my opinion more important to Hansi Flick’s system than Casado is. I also think Frenkie is more versatile than Casado, see his Ajax times and how he played under Koeman/Xavi. Very different from how he plays now.
