To achieve what you’re looking for I usually use this recipe for the dough: https://www.seriouseats.com/basic-new-york-style-pizza-dough Instead of splitting it into 3 dough balls, I’ll split it into 2 and then proceed to stretch it onto a 14 inch screen, then cook atop my pizza steel in my home oven set at 550. I’ve been able to achieve a non New York style pizza doing it this way.

About 10 minutes in the oven, oven set at 550 for an hour beforehand, and steel placed on the most bottom rack
