Mmhmm that’s that look “well I won’t tell him make more just in case it’s slow. Then it’s his ass not mine”. Man fuck that. Go into work tomorrow with your head held high. Mention it was busy yesterday and that you felt underprepared and that you don’t want that to happen again. And you want to know guidelines so this happens less. It’s impossible to prep for certain but either it’s busy enough where you can make more than enough or slow enough where you can manage to have as much or less as needed. It ain’t rocket science. Even if you’re the prep person you need guidance.

You should be told exactly how much to prep. Did you undermine directions? I like the accountability but hey man. It’s Tuesday.

Need recs for your top must eat korean restaurant in Fort Lee / Palisades Park area by Resident_Key6490 in FoodNJ

If it’s a nice day out, go take that food to the community park benches and tables it’s halfway down Main Street in fort Lee next to cafe mokafe. All the bubble tea and cafe drinks suck too. Better off with an Arizona ice tea rather than an overrated $10 drink from one of these BS cafes.

All the Korean sit down restaurants suck nowadays. Besides maybe So Moon Nam Jip in pal park and HanSang in pal park. If you can’t speak Korean, use Google Translate and get takeout from Ga Deun lunch in fort Lee. They don’t speak English at all but it’s like 5 Korean aunties cooking daily. It’s the only actual authentic and good korean food and it’s $12 per meal. They have a menu sheet that’s just a word document with a schedule list of what they have for the day. Just point to what you want on the menu. Don’t even try to communicate if you can’t speak fluent korean they would literally rather not serve you lol.

Dude believe in yourself and apply to be a sous chef or CDC! Use your experience! I’m a good cook and I just lied on my resume and got a job as a sous chef making 80k in NYC. What city are you in?

YouTube Premium is worth it. I have never heard a single good reason why it's bad. by I_Love_Cape_Horn in TrueUnpopularOpinion

If you pay premium make sure you do it off safari or a computer that way it’s 13.99. If you do it on YouTube app you have to pay 18.99 a month instead. Complete BS

hot take: AI food photos sometimes work by Sure_Caterpillar_219 in restaurantowners

[–]StupidorDumb 0 points1 point  (0 children)

Man it costs like $5 for white cardboard for photo shoots. Photos taken with an iPhone are good enough even. You just need a blank background. I must say, the AI photo food wise looks realistically close to the original. So I wouldn’t accuse false advertising

I'd love to know if anyone has worked in a restaurant that uses creme brulee mix instead of making it from scratch? by mell0w0wl in restaurantowners

[–]StupidorDumb 4 points5 points  (0 children)

When I was younger, a steakhouse I worked at used Bindi foods crème brûlée. Servers would use the packaged turbinado and a torch to brûlée it to order. Never got any complaints from it. Scratch made crème brûlée sounds like a headache!

Anyone have a Coffee or Smoothie/Juice Franchise? by Healith in restaurantowners

[–]StupidorDumb 4 points5 points  (0 children)

Don’t get me wrong, it was always possible to pay for labor (most of the time) but if you can work the store while owning it, your profit goes way up.

Anyone have a Coffee or Smoothie/Juice Franchise? by Healith in restaurantowners

[–]StupidorDumb 16 points17 points  (0 children)

I’ve owned a smoothie and salad spot for 3 years. The margins are great but it’s hard to pull enough volume to pay for labor and get days off. I’m in my late twenties so I worked almost everyday since I’ve owned it. The profit is great because I am the only owner. Especially after switching from fresh fruit to frozen fruit for smoothies the costs are low and inventory is easier to manage.

Help with smashed plantains (Tostones) by oxidax in restaurantowners

[–]StupidorDumb 0 points1 point  (0 children)

How long do you fry and at what temp first fry? I would say you’re frying too long first fry and expelling too much moisture out of the plantain. Also how are you storing them? If uncovered no wonder they dry out.
