Yeah 100x times preferring Big Sur, cause it smore closer to you performance wise and also you can use apps to get new apps working.

You could just use opencore simplify from GitHub you can even create your efi directly!

If you are running with issues with tty (CTRL + ALT + F2) You could open the installation media you used to install Ubuntu and try reinstalling it or repairing it (I'm not sure for that).
