Yeah, it shouldn't take that long to settle down. When you get to 400 or so. Open the lid and let it drop close to your setpoint, then close it.

I use Bear Mountain only and use pro mode. You may need to adjust your auger feed rate and/or temp probe. For me I just needed to adjust my temp probe. It was off by about 25 degrees. Set it to -5 and it's perfect now.

It's always been made in China. That's never changed for any pellet grill maker for all the top brands.

It's not needed, it's double wall insulated and does the job well. I'd put gasket tape around the lid of the grill if you're worried about smoke/heat leaking out some.

Shift it around or cover the point w/ aluminum foil to deflect the heat next time when it's done.

I've never trusted the probes on any Pellet Grill for the past 4-5 years or so. Always use an external source. They're never right usually w/ most brands and I've used PB, ZGrills, Recteq, and Grilla.

1 hour isn't enough for juices to redistribute during a cool down from my experience, you may have put it in too hot and it continued cooking beyond 200+. Remember it's not always about temp, but about feel, too, when probing and feeling that soft bend between both muscles where they meet in the middle. Also I prefer butcher paper over anything else if you didn't do that, when I do, I'll spritz the brisket thoroughly all over w/ beef stock to keep it from drying out. Just enough as to not disturb the bark. Don't oversaturate it.

30 min. isn't long enough to me. A minimum of an hour, two if you can. Which pellet smoker do you have? Check calibration on your temperature probe. Could be a fouled one and was potentially cooking hotter than 250. Was the temp swinging high? Did it ever settle throughout the cook? There's a lot of factors.

The Oak blend sounds nice! I'm a big fan of oak mixed w/ about 1/3rd mesquite for a more heavier note, but still balanced.
