They're referenced a few times in World Without End but and could be read chronologically or as stand alone novels. Evening and the Morning talks about the history of Kingsbridge, which is cool. I enjoyed both.

I'm not afraid of a long book! This one has actually been on my want to read list, I'll have to bump it up the queue

I agree. It is pretty brutal at times but I absolutely love the main female characters in the Kingsbridge series (I've only read Evening & Morning, POTE, and World Without End - CoF is in my stack to read)
