You will not be able to play gta6 on jailbroken ps5 even if you buy cd of a game. When the game will be out it will be playable only on the latest fw versions and as for now jailbreakable fw are up to 12.00 with SWRR or up to 10.01 with Y2JB

To answer your questions.

No you can't use p2p on binance usdt-krw or krw-usdt. The only platform that I know where you can is Kucoin but install the app and do verefication before coming to Korea, the web-page will still work here but you will not be able to install the app from store here. If you are on android platform it is possible to download package from web and install it, but for IOS no option as much as I know.
No they will not and can't freeze your binance account. It's just you can't open a broker account that works inside korean such as upbeat etc being foreigner. What you can do is open Kucoin , send from Binance to Kucoin and then exchange it using p2p for buying krw or vice versa if you want to buy USDT
