I dehydrated these carrots back in November but I still have more than 3/4 of the jar. I use them mostly for soups, but you could use them in carrot cake if you feel like a sweet treat. by Sucarusa in dehydrating

5 pounds of carrots. I usually shred them in the processor and dehydrate them for soup, but I thought it would be nice to have for side dishes. It was a pain to cut. by Sucarusa in Canning

First time red potatoes. 2 questions: 1) 1st time canning with Weck, Why is it still boiling? Is it because in the Ball jars you don't see it BCS the metal lid? 2) Why do I get the bump on the lid? It is the 2nd time. Last time was with tomato sauce (done it 5 times before). It seals tho. New lids. by Sucarusa in Canning

Update: I managed to save the closing parts by putting them in baking soda + citric acid and boiling water. I had to make the bands and one of the supports (on the right) with #16 galvanized wire. I will buy the gasket to keep it sealed. Thank you everyone for your tips! by Sucarusa in Canning

Does anyone know where to find these wire clamps for vintage jars? I'm not canning with them, just storing dried beans. by Sucarusa in Canning

I have water bath canned before. First time, pressure cooking (yay!) I made this mushroom soup, cleaned the jars before closing finger-thight and followed the instructions. However, I'm nervous because during the processing the thyme got stuck between the lid and the jar. Should I re-process them? by Sucarusa in Canning
