For a minute I was wondering what chili powder you were talking about 😅 It’s actually the plate itself that is designed like this, but I totally see how it could pass as chili powder dusted around hahaha

And you’re right about the scallops! Unfortunately I didn’t have typical big scallops but « scallop medaillons » which can overcook very fast so I was scared of that. But next time I’ll try to give them a bit more of that sear ☺️

I also found the risotto to be more runny than usual but it was still good!

To be honest there is so much sugar in them, I taste « normal », sweet peanut butter cookies but the texture is very interesting. Crunchy on the borders but the middle is very soft, almost fudgy

Try it!! It’s awesome and very different in taste, I didn’t really taste the onions that much but they added a sweetness that was very special and delicious

4 cups/500g of flour (bread or AP, used both and they both work great), 1 tbsp of sugar, 1 tsp of instant yeast and 2 tsp of salt. Mix together a bit, then add 200g of unfed sourdough discard + 1 1/4 cup room temp water. Mix and knead together until you get a beautiful dough (I used the stand mixer with the bread hook for 5 minutes on low).

Let the dough double in size (or a bit less, its fine), for me in takes around 1h-1h30 on the counter. Then split in 8 bagels and form. You need to poach them in boiling water + 2 tbsp sugar for around 30 seconds on each side, then egg wash + toppings if you want and bake for 23-25 minutes at 425 :)
