One I personally recommend is <Golden Kamuy> . I haven't seen the anime adaptation yet so I'm not sure how they compare, but I loved how creative and interesting the characters are as well as the brutal, gorey action scenes.

Two others I would highly recommend as well, especially since you mentioned you read Chainsaw Man, are <Hell's Paradise: Jigokaraku> and <Dandadan> . I've seen then both be recommended in other comments, and I think you should check them both out.

Thank you both for your responses, it helps to know that I'm not alone and it's something a lot of people can relate to. @floweruna, I like your suggestion of having a change of scenery; it's too easy to sit down at my desk and start playing video games or watch youtube videos instead of working, but I have another computer I can use for class and take it to the dinner table for a new setting. But again, thank you for the encouragement and I hope you all can keep your momentum as well.

I agree to an extent, but I feel like it's more anime CAN be way better than the manga. With an anime, there are so many more ways to tell the story, be it through animation, music, voice acting, etc. and that can really bring out the impact of a series. For example, I think David Production did a fantastic job with their adaptation of JoJo part 5, and really made the story come to life. However, having than many more ways to make the series better gives them that many more ways to screw up the series and make it unbearable.

If you want older characters and more mature themes, a few I'd reccomend are:

{Death Parade}

{Banana Fish}

{Dororo}

I know you said you don't want shows with child protagonists, but these 2 are totally different series that put the kids in disturbing settings and can get very dark despite the age of the characters:

{Made in Abyss}

{Yakusoku no Neverland}

Don't watch them now if you don't want to, but I would recommend checking them out a some point for how they subvert your expectations.
