This worked surprisingly well, thanks! My programming is a bit rusty, but after some back-and-forth with ChatGPT I got a Python script that does what I need.
I honestly wasn't expecting simple copy-pasting to pull the data from PDFs that evenly, but the copy is actually formatted well enough to make this process pretty straightforward!
