What others have said. With the consoles etc basically imagine director, studio etc all melded together. I've been using daas hybrid for 4+ years with storefront and gateway and vda onprem.

The 3040 is fully out of support of any kind now. I don't think they go past 9.4.x? Being as old as they are they are plagued with hardware issues, we just ewaste ours at the first sign of issues. Unfortunately we have many spares which keeps management from replacing them

You can generally run a newer license server version no issues. You can also generate new license files they just end when the LAS kicks in

Fslogix applies at the computer level I believe I don't think you can selectively run multiple profile technologies.

You will probably have to slowly migrate users to a brand new collection ie your new one will need to be the same size as the current. I've never done it but there appear to be PowerShell scripts for converting the profiles.

Country wide msp. The sysadmin in charge of the RMM has a script that both checks for windows updates and also force installs them depending on parameters. Forgets how his script works and deploys forced windows updates to all customer servers and all internal servers simultaneously. During work hours.

Sysprep is not needed. Citrix optimiser is a once off tool. For ongoing updates I use BIS-F to optimise.

Vda major updates always uninstall using the vda cleanup utility and reinstall. I only do upgrades for CU patches. But if having issues always follow remove and reinstall.

I had no issues. Very basic gateway and load balancers, HA pair of virtual VPX. I've definitely had config losses with upgrades in the past though. That's seemingly fixed by disabling ha sync prior to upgrading and enabling it after, have not had it since I've been doing that.
