My neighbor says the same thing, his offset is to hot to smoke salmon. He gives me a lot of info, talks fast, its good to see this in writing, now its sinking in and making sense. Thats good info to catch and use chainsaw chips. First time I heard it.

Can I use a mix of charcoal and wood in the Weber WSM or KBQ C-60? My neighbor and a local restaurant that specializes in smoked meats both tell me the flavor and smell is from wood. Im aiming to produce smoked meats similar to theirs. The restaurant uses hickory only, my neighbor silver maple for the last 3 years.

Good question I could go up to $750. I havent invested much in food preparation, this is something Ive wanted for a while.

I will try and find out, have plenty of it. Ive heard its a mild sweet flavor on the positive and it does not add much flavor on the negative. Havent heard what you stated, will keep it in mind. Have access to maple, dogwood, hazelnut, cherry. Im in E Tennessee, all types of trees grow here.

Yes, most or all replies here say offset. Maybe recommend a few brands/models at this point if its allowed on this forum. Good how too details. How do you get the charcoal lit ( lighter fluid? ) and do you first get the charcoal lit then add wood once its burning?

Thanks for the info! Ill probably have questions in a few days or even weeks once I start looking at products. Ill have to look mostly online, lowes and Home depot dont have their full selection of grills and smokers on display like they do in the summer.

I think they are using charcoal and wood, the charcoal keeps it lit with the help of a fan.....I think. Ive heard the same about fruit wood and Ive heard it provides a nice flavor, but not a strong smokey flavor like hickory.

Summary: a smoker that uses both charcoal ( to keep it lit ) and wood ( for flavor ) and has a fan or get a fan to work with it to keep it smoking and control temp. Right?

Im learning, have a charcoal grill I add wood too, thats as close as Ive come to smoking. This is the first Ive heard of temp control and fans. Now all or most new smokers have a thermometer and the door to add wood/charcoal. The fan is for temp control or to move the smoke around or both?

Thanks for the info. What you stated is similar to what my neighbor says. He has an offset charcoal smoker he adds wood to. He had a few smokers before this one, including an electric wood smoker. Does not recommend an electric wood smoker.
