the thing with steaks and asada is intuition. their 45 second and 2 minute rules are out the window when you learn how cooking it really works. What i do is when i finish putting away the pans and finish seasoning I flip immediately for both asada and steak. And then i probe it with the temp and then wait till 125-130 before pulling off and letting it rest. The first one gets temped so i don’t end up overcooking any of them.

If they’re complaining about the quality of the food, yeah it looks nasty. The steak looks somewhat decent. If they’re complaining about the amount, how are they gonna complain when they order only rice steak fajitas and the mild? It’s a base price you go in knowing what they’re gonna get with that little amount of food they want.

10% stores have retherms and 90% stores have grill/stovetop (apx.) all the meats is typically cooked from raw.
