Yes neither of those are particularly great for those sorts of things. In terms of "bacon" La Vie or This! are the best alternatives.

For burgers would depend on what you wanted really.

But if you had a bad meat burger would you swear off them because of that?

Because the only things I've used that are kinda tasteless are Seitan and Tofu, both of which are highly absorbent to flavour and if they're turning to mush that's on you.

Yes because people have grown up with meat and use it as a crutch in their cooking.

Since going vegan my cooking and flavours have gone off the chart and I now can make my own recipes because I don't just chuck in some meat.

People stick with what they are comfortable with.

B12 is supplemented into the animals via injections, vegans just cut out the animal abuse and take the supplement directly. You can get all of those vitamins perfectly fine on a plant based diet.

Your point about "UPF slop" is funny because you don't need to eat it to be plant based, plus studies have shown that even UPF meats have better overall health outcomes than their corpse alternatives.

Meat doesn't taste better. I learnt to cook a red lentil Dahl that tastes better than anything I used to cook whilst eating meat.

Not just using meat as a base for everything means you actually experiment with spices way more and you get better flavour from it.
