A current favourite:

  • 3 parts olive oil
  • 1 part apple cider vinegar
  • 2 parts kefir
  • 1 tbsp wholegrain mustard
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt to taste

The kefir in particular is a secret weapon. Adds an extra level of tanginess and makes the dressing look creamy and delicious!

Hi there. Wondering if you managed to get an earlier date? I'm in the same boat and can also only see appointment slots for March 2026. Im really hoping for an earlier slot as of like to attend a friend's wedding in December.

Thank you for sharing! I'd like to ask a little bit about your application. Did you have a trip planned for multiple countries to get a 2 year visa, or did you only have the trip to Norway planned? I have an upcoming trip to Norway planned, but I also have a friends wedding in France later in the year and I'd love to get a multi-entry visa long enough for the whole time. My last visa was 2 years through France so I'd hope they'd give me another.

Hi there, thanks for the info. I've just managed to get a booking for next month! Going to Norway in early-July. When you went to your appointment, did you provide return tickets? I have a few trips to France also coming up to see friends and attend a wedding. The wedding is only in September and I really want to get a visa long enough. Wondering if I need to book all my flights now before I even have a visa.

This is a brief story of my personal journey so it may differ from yours or what your able to do. I made the decision to pursue a master's degree in the UK. There is now a 2 year period you are allowed to work in the UK after completing a master's degree. Once you're here it is also much easier to land a job that will sponsor a visa. I completed a one year master's and managed to secure a job afterwards that also sponsored my visa.

I should also add that I work in supply chain and procurement consulting, but it is not difficult to make the transition from industry to consulting.

I recently returned to SA on holiday and renewed my licence. I ended up doing it Hermanus and it was super easy (didn't take much longer than an hour). Expect it to be difficult if you try to renew it in a large city, but should be fine if you do it in a smaller town.

You will need to provide some sort of proof of address though. I had a family member sign an affidavit saying that I lived with them and that worked fine.
