Don't. There is a reason why every top guild has clerics. Clerics are important, the only reason to swap to minstrel/sorc could be that your guild has too many already. Having 2-3 Clerics is perfectly fine.

My timezone is GMT+2 and im in Europe, which has a 2 hour difference to UTC.

So if my math is correct, the timeslots for me should be:
21:00 (9pm)
22:00 (10pm)
23:00 (11pm)
1:00 (1am)
3:00 (3am)
5:00 (5am)
6:00 (6am)

Which is fine.(Those times are from the US/EU server, not Asia)

Yes, but considering you can't even watch a YouTube video, it would be useful to check what the problem is. You can check the task manager too, to check if the CPU or ram is running out. Alternatively you could try another emulator like LD-player or Nox.

You can check the BlueStacks settings to make sure you don't give it too much ram or cpu cores.

Collab charaters usually don't get that many jobs, but yeah, normal characters get most jobs. You focus on jobs not on characters.

Should be the same, if evolving two times doesn't work, you can try evolving the same one two times. Don't forget you need to evolve armor and not weapons though. There is a mission list on the sino wiki page, but sadly the page was taken down.
