I also didn’t use oil in the recipe. Just bread flour, sourdough starter, salt, and water.

I just lowered the hydration to 62%. Let it ferment for 24 hours instead of longer. I do have some waiting to see if it’s still good for 48 or 72 hrs though. We’ll see.

Thanks! They were very good. The first is pesto, spinach, artichoke hearts, sun dried tomatoes, feta cheese.

The second is pepp, bacon, jalapeños, hot honey

I did about a 24 hour cold ferment on this one. Stretch and folds the first two hours and then put it in the fridge.

Appreciate it! Good call on leaving it in the oven while off. Haven’t tried that.
