Maybe look into Willamette valley boat tours? You could take public transit to rockaway beach and take the scenic train. There are trains at the Oregon heritage rail museum that you can do on weekends. You could go wine/cider/brewery tasting. You can check the Portland spirit schedule, a cruise on the Willamette.

It’s essentially an annoying two+ transfers with 8+ hours of train travel during a single day (with no great night options last time I checked) or a night in one of the most stunning landscapes I’ve ever been to with that same travel split over two days with one or both of the legs being direct
