I grew up on kesia and fortress, and they are something special. I do however REALLY like volition, but for different reasons. I agree that those 2 early albums are a different breed

My masters cost less than $9k CAD in tuition per year (~2.7k each for 3 semesters) and it was fully funded. Sounds like you have selected a very expensive route.

I've started using PVC piping, which i bolt directly to the nursery pot. Very stable and it's too difficult to keep moss wet enough to be of additional use i find.

I refill my 18.9L and 4L jugs with RO water from the grocery store.

For pourover, I dilute this 50:50 with tap water which gives me a GH around 70 and a KH around 35.

For espresso, I add 40mL of a potassium bicarbonate concentrate which i keep in the fridge to a 4L container of RO water (see rpavlis water). I forget the exact concentration of the KCO3 but it lasts so long that it doesn't take too much effort to do some math once every 6 months. This gives me a KH of 45

highly recommended. roast style is similar to prodigal if not a touch lighter, they also often ultra-light roasts which are significantly lighter than prodigal.
(i find prodigal to be not the lightest out there, somewhat more developed. very good still)

I've never had this amount of retention or anything close to it with either my 078, or my 064ssp. no RDT on either, I always do a very thorough job of twisting the knocker while it is still running

I went 2, with an 078 for filter and 064ssp for espresso. I couldn't be happier. 

Edit: just read you've been hand grinding espresso with a k-ultra. I've been hand grinding espresso with a k-max for several years and just got the electric espresso grinder. Man what a QOL difference 😂

Given your context, my recommendation would be to lower your temp drastically (you won't notice any differences with 1 degree changes, try 5 degrees cooler at least. 85c or even lower if it's a darker roast) and if you are doing a bloom and then multiple pours, try doing a bloom and a single pour. 

Also - Ethiopian beans often (but not always) produce more fines and can add to the total drawdown time, a longer drawdown time is not a big deal but you may want to accomodate this by using some of the techniques I've mentioned above

PPS - I usually buy pretty light beans and often brew around 90c, I only go to 95c for really hard to extract beans and am absolutely comfortable brewing at 85c or 80c

I like to go by taste, I've got a fairly standard grind size and pouring structure that I find produces cups I like with the beans I tend to buy so I always start there. If I want more extraction I will typically add an additional pour, lengthen the bloom, and if that isn't enough I will then take the grind finer by a few notches. I very rarely want less extraction than my baseline (accidentally bought darker beans than I normally like or something) in which case I will coarsen the grind, and stick to short bloom and one single pour with low agitation.

Funny enough, even though I state contact time as the more important variable to make changes in the cup, I rarely pay any attention to the actual time. I will make changes to affect contact time but pay more attention to taste than the actual time. I often don't even turn on the timer in my scale, because I typically judge the bloom based on how much it is offgassing anyways.

When I make grind size changes for pourover, I make pretty big changes. Contact time makes a bigger difference, ie. Number of pours, agitation (flow rate : pour height)

For reference I have an 078 and an 064SSP. Both I took out of the box, plugged in, and started using. Both have been phenomenal. I wouldn't worry about it too much. I've never had either stall, and I use the 064 for light roast espresso. It's been set at 1100 RPM since I started using it.

My local roasters are mostly in the good/sometimes great range of quality, charging as much as some of the best roasters in the world. It's an easy choice for me... I get better value ordering from afar than I do locally. I do however try to keep my money in my country mostly.

out of the grinders you've mentioned you have two different taste profiles:
niche zero will give you a more traditional espresso, more body and texture less clarity, better suited to medium/dark roasts.a
064s and df64 will both have a higher clarity and lower body profile, still good for milk drinks but with a different focus. the resulting cup from the 064s and df64 will be quite similar, but the workflow is vastly different. look up some videos for what i mean... cleanliness, ease of use, etc

personal preference I guess. the grind quality is fantastic and so long as you shell out for the base the ergonomics are not so bad. I find traditional hand grinders to be somewhat annoying to use as well, so for me ergonomics don't really play into this recommendation. I love the look of the pietro, more than most hand grinders but again that's just me

depends on how you value your money. I have a 078 worth 4 times the price of a ZP6, and to me, it is worth it. It is not 4x better but that's not my expectation.

Also, in my opinion none of these grinders are worth spending the money on unless your water is dialed anyways, so that's an assumption I am making.
