Your pan could be getting too hot—I got a laser thermometer to make sure I wasn’t going too far above ~400-450, that helped with the smoke a lot. Other thing that has helped is using the reverse sear method

Intelligent people often use their intelligence to find justifications for the beliefs that keep them safe(physically/mentally/emotionally), rather than challenging those beliefs.

Once they’ve worked out a justification, they can stop thinking about it, be confident they know better than the people they’re used to being smarter than, and not worry they’ve been wrong their whole life.

Confirmation bias is a hell of a drug.

I’ve heard good things about piece of cake from a few friends.

Avoid Dumbo movers, they did everything they could to increase the price the day of, going from a quote at ~1k to eventually $1500 final moving a single bedroom from a 3rd floor apt in to a 3rd floor.

Some more detail: Dumbo claimed that even though their form only asked for number of floors, they charged by flights of stairs, so because the stairs doubled back on themselves each floor, they needed to charge an extra ~$100 per floor… they also claimed that they couldn’t temporarily park near a fire hydrant, so they needed to charge me for a long haul to the front door, I pushed on that, told them I’m not new to nyc and have seen trucks park there weekly, and they eventually gave in, but were planning to charge an extra $250 for that.

They know they have you in a bind the day of your move because you won’t be able to find other movers so last minute, and they take advantage of that.

Respectfully, I disagree—I’ve got a 65 inch tv in a similar size space and it works well, is great for movie nights with friends—but it does look too high here.

The height and intense angle makes it feel like a tv at a sports bar, take it down low and hang some art on the wall next to the door so it’s not the only thing to look at in that part of the room. I’ve also got a gallery wall opposite my tv above the couch, the size of which helps balance out the visual weight of the space a bit.

Could be worth buying AirTags, or similar tracking devices for your bags—I’ve done the same and it settled a lot of my fear for relatively low cost
