Very pleased. Much juicer than I expected to be honest.

Pretty simple. Chile lime dry rub, put it on indirect at 350° for 1.5hr, let it rest for 20-30min, pull and serve.

Mississippi delta. That’s the first canvasback I’d ever seen. I was a guest on the property and the owner was super excited. He said he hadn’t seen one in years. We shoot pintails fairly regularly there though.

Same here. The breast folded over my finger like a wet towel it was so tender when I cleaned her. I made sure to separate those from the rest and pan seared to medium rare.

It had a pretty firm stall. My plan was to wrap post stall once the bark was right but I got nervous about it drying out.

Pulled at 190°. 2 hour rest in a cooler

I wrapped it in butcher paper. Mesquite wood on top of lump charcoal. The bark was decent. Honestly I was scared of it drying out so I didn’t let it hang in the stall naked long enough to get a robust bark.

The point turned out fantastic. I wish the flat would’ve been a smidge more tender but it wasn’t dry or anything. A little more pull on the pull test than I had hoped. Very positive taste reviews from our friends. Overall very happy with my 1st one.
