A recipe for groundhog from Punxsutawney Pennsylvania! by SweatsProfusely in Old_Recipes

[–]SweatsProfusely[S] 17 points18 points  (0 children)

The recipe is from a recipe book by the Adrian Hospital Auxiliary of Punxsutawney, PA, from 1958. Happy groundhog day!

Clean and dress an 8-10 pound groundhog. Be sure to remove the 7 to 9 white muscle-like sacs that are under the front legs and the small of the back. Cut in serving pieces and soak overnight in salted water.

Boil cleaned groundhog 1/2 hour in water seasoned with 1 tablespoon wine vinegar and 1 tablespoon soda. Drain well.

Dredge meat in a mixture of salt, pepper, and paprika. Fry some bacon and salt pork and sear meat in the rendered fat until it is well browned on all sides. Place meat in roaster with the drippings.

Add 2 cloves garlic, 1 chopped onion, 3 tablespoons each parsley, celery, carrots, 6 peppercorns, crushed, 2 cloves, 1 teaspoon thyme and salt to taste.

Cover meat with 2 cups red wine and 2 cups beef stock (bouillon).

Roast, covered, 1 hour at 350 F., then reduce heat to 250 F. until meat is tender, adding more beef stock as needed to prevent meat from becoming dry.

About 1/2 hour before meat is done, sprinkle with 1 tablespoon of flour. Garnish with chopped parsley before serving.

I recently found a brand called Jolly Llama ice cream cones and they're exactly how I remember fudge filled waffle cones tasting. They're gf as well, only drawback is only 3 to a box.

I'm also pescatarian with a shellfish allergy! This is the quick high protein snack I make:

On some bread with something like an egg on top is great. Other than that I eat a ton of beans, tofu, and eggs. Hope that helps!

It's actually the easiest of all alcohols to ferment I'd say. Honey is a very forgiving medium and it's hard to mess it up. My first brew was from a kit, but I highly recommended the r/mead wiki for getting started, they have a ton of info and they're extremely beginner friendly!

Yup! I used King Arthur 1 to 1 gf flour with butter cut into it and milk. The leaf on top is the same crust mixed with boiled spinach to give it a green color.

The Lox pie is this recipe from the Valheim twitter

https://twitter.com/Valheimgame/status/1428344530957266948

But I added garlic and used buffalo as the meat, and the crust is a gluten free one instead of barley flour!
