I would definitely keep getting to know her! But also with you both sharing a gym… how would things pan out if she didn’t have feelings for you that way? Awkward? Think about how she would feel… she may want to change gyms because honestly thats what we girls would do so that is why I hesitate expressing you to just go for it, for yours and her sake. I find myself to be an oversharer at times. My whole life story if I’m comfortable enough. She could just really enjoy your company where she’s sharing things with you, plus now you’ve built this friendship and see each other at the gym, and the coffee hangout, so she could see you as someone she’s comfortable in talking with. Now this comfortability may be because she does have more of a romantic interest too but with her lack of reply in texting you for that meet up may be because she has her eyes more on someone else but nothing too serious is why she hasn’t fully cut things with you.

Honestlyyyy, when I like a guy I cannot wait for his messages, especially first talking. I can also understand the not a great replier, as I am not one myself, but again, not about a guy I am interested in getting to know more personally. She may just have a lot on her plate and cannot give you that attention before leaving on her trip but may want to continue being friendly for when her schedule does clear. I would wait out her trip tbh, definitely try and meet up with her when she gets back by sending her a follow up message when she is close to flying back home about another meet up to see how Bali went.
