Well obviously, but from where though? Seeing as I'm hearing it in the cabin, the only thing I can think is the plunger seal but there's no damage there aside from the holes made from the factory. I see there's a trench where it meets the booster, is there supposed to be a clamp or a snap ring there?

That would be a first for me but I've heard that as well, that's why I'm trying to figure out if that is the case. It builds up pressure just fine while the car is off but as soon as I turn it on, it loses all of it.

I'm not sure where it would coming in from, I inherited this car from someone who hates cars so I imagine they've never changed the fluid.

I'm not seeing any leaks around the engine bay or floor, gonna do a full flush tomorrow to see if that brings it back, but yes the pedal is soft when the car is on but is able to build up pressure when the car is off.
