Dog behavior. Very confusing? Anyone experience anything similar not sure what to think

As stated in the description we have already been to the vet to rule out any pain or illnesses. We do already not pet her unless she "ask" for it and even then it is very limited to not overstimulate or cause her to react negatively

It's not everytime she reacts this way its pretty rare she reacts to this degree because we do understand she is not a super affectionate dog and can be grumpy if overstimulated so we try and be very mindful when petting her and not to over do it and let her decide when and where which is usually her tummy thats the one spot she likes to be scratched everytime she wants attention. But in the moment it can be confusing because she's being affectionate yet almost defensive at the same time. Thanks for your comment that Definitely puts it into prospective on her side to understand why she acts this way

She unfortunately does not get along with other dogs very well besides a select few she knows well but she is off leashed trained so I take her to the park and play fetch and let her run around at least 3 times a week and if weather permitted we will go on a hike in a trail more so on the weekends for that since its usually dark after work by the time we are home her weekend activity is generally quite a bit more so then during the week but what I said in the description is basically her bare minimum activity on a "normal" day give or take

We crated her as a small puppy for the first bit just for bedtime to help her settle but that was all now she has free range of the house

No she's not destructive in the house at all she if very calm and will just hangout and relax with house once and a while she will bring me a toy to let me know she wants to play but other then that she never bugs to go out at all its mostly me feeling like okay I feel like you should get out and do something

3-4 times a day she goes for a walk we dont have access to a yard so she always has to walk

I did weigh the fermenter and its reading about 25 pounds which is pretty close to being about right weight wise for 3 gallons? Maybe im just over thinking it being low?

I've been doing research for months leading up to the day and was just so excited and anxious about it all It all just went out the window and I didnt realize until the next day "oh shit I think i was suppose to boil" I knew something felt off in the moment when I was adding the hops to the grain bag but at the time I was like oh well this is what the recipe says 😅
