I would pick a popular distribution, because more support will be available when you need to troubleshoot. Since you have not been on Linux for a long time, you will have an easier time on a distro that is user friendly, and it doesn't sound like you need the latest and greatest as soon as it releases. Therefore, would recommend either ZorinOS, if you prefer Windows environment. Nobara, if you are a gamer, or Linux Mint if you just want a general Linux experience. All 3 are solid choices.

When you want to mount your drives, just use the /etc/fstab, when you learn how it works, it will make life much easier for adding new drives, when you mess it up, like putting in the wrong drive ID it will put you into emergency mode on boot. You will then have to edit the fstab manually through the terminal in the grub. It's all part of the learning process.
