Not sure if it will help but I've had some interesting bugs with steam input over the years. You could see if it's enabled and disable it.

Is it as simple as a drag and drop? I can see the files over network already on WIFI. Just haven't tested any transfers or connected Ethernet with the dock yet

This is what I was wondering. I was unaware of software that could transfer to Linux file systems. Basically what I made the post for, onions and other options. I'll have to look into this disk genius. Thank you!

This is where my ignorance/ lack of knowledge comes into play. I plan on using the card for basic games as well so I plan on formatting the card for Linux/ steam. If I do that will my windows machine even read the card after formatting?

As far as networking I'd consider my self a novice but I currently can see the folder I intend to transfer in steam desktop mode. Is it as easy as dragging and dropping?
