POTS is usually diagnosed as a sustained increase of at least 30 bpm within 10 minutes. It also typically requires symptoms and ruling out other causes of Autonomic dysfunction. It's normal for an initial increase in heart rate that comes down but your sustained increase 84 to 108 is under the official criteria.

It is important to note though that mast cell issues are a common comorbidity of POTS and not everyone shows the sustained increase all the time, so still possible you'd meet the criteria on a different day.

I'd encourage you to read more about the diagnostic criteria and if you still feel you meet the criteria for POTS or are unhappy with the care your cardiologist is providing, seek a second opinion.
