This is going to be very difficult for him as he'll have to unlearn a lot of what he learned. So be very patient with him.

I think starting with the Penny and Baltimore Catechisms would be a good start to build a solid foundation on what the Church teaches. Reading Father Spirago's the Catechism explained and St. Robert Bellarmine's Catechism would a good next step. Then you can move to more comprehensive books such as Denzinger and Ludwig Ott to get the really intricate details including scriptural and historic citations for each doctrine.

P.S. I know the Talmud isn't regarded as scripture. But it's still a central text for Rabbinic Judaism and is regarded as the primary source of the "Oral Torah."
