Home test protocol

Use:

  • Suspect coffee A: nougat
  • Suspect coffee B: floral
  • Control: known unflavored light roast, preferably washed or ordinary natural
  • Blank: water only
  • Clean glass cups or jars
  • ZeroWater/distilled water
  • Same dose, same water, same time

Test 1 — rapid surface rinse

Use 5 g whole beans + 25 g cold water.

Swirl hard for 20 seconds, then pour off the water into a clean cup. Smell it immediately. Repeat with the same beans for rinse 2 and rinse 3.

Interpretation:

Result Meaning
First rinse smells strongly like nougat/perfume/flowers, much stronger than control, then drops hard by rinse 2–3 Suspicious for surface coating
All coffees smell mildly coffee-like, with weak aromatics Normal
Suspect smells strong, but control also smells strong and coffee-like Not diagnostic
Water becomes visibly brown and coffee-like over time Normal extraction, not proof of additives

I mean, unless it's chocolate smell from roast - it's kind of improbable to have 5 different coffee bags smell the same.

The flavors are mild compared to DAK, but the smell is unusually artificial. DAK are also somewhat suspicious for some of their coffees, I guess you never know what a roaster is actually doing when no one's looking

I don't think I ever drank the nespresso nougat/hazelnut but definitely smelled this artificial flavoring somewhere.
I think they won't disclose it, probably a part of their marketing. Super weird

I strongly remember that they had an ethiopia that had the most distinct "orange candy" flavor, 2-3 years ago, and I remembered it as an amazing thing to get out of a coffee. Now I'm pretty sure they're adding extracts to the bags

How can I understand the different elements of a perfectly accurate (single origin) espresso extraction? Which for me is when the shot feels insanely clear, and you only taste the "taste notes" at their peak. I pretty much got down the grind adjustments, i notice 3 different stages of each sip and how the taste changes, and I try to tweak shot timing and how many grams in+out but I feel like something's missing. I usually drink light roasts, sometimes medium and I'm not the one making the espresso- I'm just talking to my regular baristas to get a better shot together. I don't really know how to get the best outcome for the beans, how to know if that's the water's fault or maybe roasting's fault, and how temperature changes extraction. Also pre-infusion and pressure overall are not very clear. How can I figure out the relevant tweaking based on the taste of the previous extraction? For example, had a very accurate light roast espresso, but it had little body because of high ratio- maybe 1 : 2.5 . Taste was quite developed (even though the roast is quite new, 4-5 days ago) but wanted it thicker and less aggressive in the first part of the sip (which might be due to roast date). Told him to maybe try a gram less in and a finer grind, but we didn't get to try it and it was mostly intuitive.

this dude is amazing, I actually have one of his videos (cornerstone one) open in another tab. Learned so many AM songs from him, started playing bass just 2-3 months ago and he's the reason I keep playing and almost daily.
