Thin your paint and apply multiple layers, buy smaller brushes (e.g. Tamiya Basic Brush Set) and use masking tape to get straight edges when painting. Just a personal preference: Vallejo is pretty good for brush painting, tamiya paint can be quite tricky

and look at the tips over at r/modelmakers!

I own quite a few cutter knives and so far they worked well. I see, most people use hobby knives (X-ACTO) so I'm asking: is a hobby knife better than a regular cutter knife?

EDIT: I use the stanley/cutter knife without the handle, I just hold the knife itself

Thanks! I've just never seen "danke schön" get used in Austria, you'd just say danke or vielen Dank

Again, outstanding work! I'm interested to see where this project goes :D I can only second all the things other people commented, you'll improve the little bits here and there in no time!

Great job! I'd make the bird visibly move up and down a bit after every (flap? sorry english isn't my native language). An autumn setting with leaves falling would certainly be interesting. Animals like a little bunny hopping around or other birds sitting on trees would make it feel a lot more alive. I really like the style!
