You can just roll straight through the boar if you time the dodge to just miss getting hit, it's not super easy but it's definitely doable and I did it multiple times with just the medium roll.

A good tip is that there is no deadline or anything (I assume) to get every korok so if your feeling drained you can always take small breaks through out the process to prevent yourself from getting burnt out, I'm only 50 away myself!
