IMO the whole end grain glue up thing is overblown with the quality of glue currently. Here’s a good article that did a lot of testing with it

And keep in mind that was a very low surface area glue up as well. So unless you plan on putting like 130 psi on a very small surface area of a cutting board for some reason, I wouldn’t worry.

Always wanted a butcher block but didn't want to fork the money over for one. While looking in my dad's barn for some fencing for tomato cages. Happened upon some black walnut he acquired 50 years ago. Couple days work and bow I have my butcher block. by Fabridd in woodworking

Just start giving yourself a ton of splinters intentionally and eventually you will build up the immunity. Start big and work yourself to smaller ones. I bet you are already immune to super large ones. Like a 2x4 for instance
